The name Madras is a British invention. It has come to denote a very spicy, hot and rich curry in a thick sauce. It is served up in restaurants or to take away, and been translated into dozens of commercially available brands of curry powders and cook-in-sauces.

Madras curry is usually beef-based in UK curry emporiums, but there are often chicken, lamb and vegetarian versions available.

A fragrant, fairly hot and simple curry originating from the south of India. Not quite as hot as the vindaloo. Madras can be made 1-2 days in advance which will enhance the flavour. A good squeeze of lemon and a handful of fresh coriander goes very well when added during the last minute of cooking.
