20g Dhansak Spice Mix -
20g Garlic & Ginger Paste -
Whole Spice Mix
You’ll need
- 400g Chicken, Lamb, Beef or Vegetables of choice
- 100g Red Lentils, rinsed
- 1 Medium Onion (≈150g), sliced
- 1–2 Medium Tomatoes (≈150g), chopped
- 500ml Water or Stock
- 2 Tbsp Oil
- 1 Tbsp Lemon Juice
- 1–2 Tsp Sugar, to taste
- Fresh Coriander, chopped (Garnish)
Method
Cook The Lentils
Cook the lentils in 400ml water or stock for around 20 minutes until soft. Set aside.
Toast Whole Spices
Heat the oil or ghee on medium heat. Add the whole spices and fry for 30 seconds until fragrant.
Cook The Onions
Add the onion and cook for 12–15 minutes until golden.
Add Garlic & Ginger
Stir in the garlic & ginger paste and fry for 1 minute. Add the Dhansak Spice Mix with a splash of water and cook gently for 1 minute.
Cook The Tomatoes
Add the tomatoes and cook for 8–10 minutes until thickened.
Simmer Until Cooked
Add your chosen meat or vegetables and stir well. Add the cooked lentils and remaining 100ml water or stock, then simmer until cooked through.
Finish & Serve
Remove from the heat and stir in the lemon juice and sugar to taste. Garnish with fresh coriander and serve.
