The standard recipe for the Bhuna generally contains varying proportions of cumin, coriander, mustard seed, chilli, fennel, shallots, ginger, garlic, tomato and curry leaves.

- 600g chicken (or your own choice of meat) - 400ml chopped tomatoes - 300ml stock - 60ml natural yogurt - 2 cloves of garlic or 15ml paste - 1 stem of ginger or 15ml paste - 2 green chillies - 2 tsp. lemon juice - 1 tsp. salt - 1 large onion - fresh coriander
