Madras Curry


Cook a delicious Madras Curry at home with your CurryKits kit.

  • 20g Madras Spice Mix

  • 20g Garlic & Ginger Paste

  • Whole Spices


You’ll need

  • 400g Chicken, Lamb, Beef, Prawns or Vegetables of choice
  • 1 Medium Onion (≈100g), sliced
  • 1–2 Medium Tomatoes (≈150g), chopped
  • 1 Tbsp (15g) Tomato Purée
  • 2 Tbsp Oil
  • 150ml Water or Stock
  • 1 Tsp Vinegar or Lemon Juice
  • Fresh Coriander, chopped (for garnish)

Method

Toast Whole Spices

Heat oil on medium heat. Add the whole spices and fry for 30 seconds until fragrant.

Cook The Onions

Add the sliced onion and cook for 12–15 minutes, stirring occasionally, until golden brown.

Add Garlic & Ginger

Stir in the garlic & ginger paste and fry for 1–2 minutes.

Add The Spice Mix

Stir in the Madras Spice Mix with a splash of water. Cook gently for 1 minute to release the flavours.

Build The Sauce

Add the chopped tomatoes and tomato purée. Simmer for 8–10 minutes until thickened and the oil begins to separate.

Simmer Until Cooked

Add your chosen meat or vegetables and stir well to coat in the sauce. Pour in the water or stock, cover, and simmer until cooked through.

Finish & Serve

Stir in the vinegar or lemon juice. Garnish with fresh coriander and serve hot.
