  • 20g Rajasthani Spice Mix

  • 20g Garlic & Ginger Paste

  • Whole Spices


You’ll need

  • 500g Lamb or Mutton (Bone-In, Diced)
  • 1 Medium Onion (≈150g), sliced
  • 1–2 Medium Tomatoes (≈150g), chopped
  • 1 Tbsp Tomato Purée
  • 100g Greek Yogurt or 50ml Crème Fraîche
  • 2 Tbsp oil
  • 200ml Water or Stock
  • ½ Tsp Lemon Juice
  • Fresh Coriander, chopped (Garnish)

Method

Toast Whole Spices

Heat the oil on medium heat. Add the whole spices and fry for 30 seconds until fragrant.

Cook The Onions

Add the onion and cook for 12–15 minutes until golden.

Add Garlic & Ginger

Stir in the garlic & ginger paste and fry for 1–2 minutes.

Add The Spice Mix

Stir in the Rajasthani Spice Mix with a splash of water and cook gently for 1 minute.

Cook The Tomatoes

Add the tomato and tomato purée. Cook for 8–10 minutes until thickened.

Simmer Until Tender

Add the lamb or mutton and stir well to coat. Pour in the water or stock, cover, and simmer for 60–75 minutes until tender.

Finish & Serve

Remove from the heat for 1 minute. Stir in the yogurt or crème fraîche gradually, then return to a low heat for 1–2 minutes. Finish with the lemon juice, garnish with coriander, and serve.
